Crust LESS Quiche

I've been trying to cook more around the house.  It's healthier than eating all that pre-packaged food & it's waaay cheaper!  I don't like things that require a lot of ingredients though.  I don't eat beef, but I do eat other meats, so that limits us on a lot of the things I cook.  I will cook beef for Terence if he wants it though, usually I'll cook him pot roast in the winter time ;)

A couple nights ago I made this crust less quiche.  I decided to make it without the crust because it saves on a ton of calories if you do it that way!  I sort of made this up, but it turned out delicious!
 *10 eggs
* 1 C. sharp cheddar
* 1 cup frozen spinach (thawed & drained)
* 1/2 onion (I use the frozen pre-chopped kind)
* 1/2 a link of Hillshire farm smoked turkey sausage cut into cubes

I dumped all this in a bowl and mixed together then poured into a pie pan & baked for around 45 mins at 375 degrees

A great and easy side dish is baby taters.  Just drizzle with olive oil and mix with freeze dried dill & seasoning salt.  Bake at 375 for about 40 mins.
Tonight I am going to try and make homemade GYROS
We shall see how that turns out :-)

I'm soooo looking forward to this 3 day weekend coming up! 
Nana & Poppy are coming to visit and we are so excited!

I am right ther with you on the getting into things front! I don't kno what posseses Megan to get into the things that she does, I mean WHY IS THE STINKY GROSS GARBAGE CAN SO FUN???

That looks delicious! And I looove frozen pre-chopped onion. I use that and the pre-chopped green pepper in recipes all the time!
